We work closely with a network of local producers, whose deep knowledge and dedication bring us ingredients of remarkable character: trout from the creeks near Târgu Secuiesc, creamy dairy from Imeni and Covasna, pasture-raised meats from the fields of Transylvania, vegetables from Cernat, and rustic bread from Ghelinta. Our own bees gift us the honey, and in the warmer months, a selection of herbs and produce comes straight from the estate’s garden.

The result is a cuisine that is unforced, seasonal, and quietly refined — shaped more by nature than by trend.
